Craft Brewers Alliance, Inc., representing Widmer Brothers Brewing Company, Redhook Ale Brewery and Kona Brewing Co. has an immediate opening at the Cataqua Pub in Portsmouth, NH for a Kitchen Manager. Reporting to the Pub Manager, this position will be responsible for the leadership and management of the kitchen on a daily basis including, all food production, cost control, service standards, staffing and training of all hourly staff, operational procedures and policies, sanitation, environment control, staff motivation, safety and security. The Kitchen Manager must have the ability to effectively interact, communicate and manage staff and guests. The Kitchen Manager, as a hands on manager, creates an environment that encourages ownership and accountability and maintains Redhook quality and ethical standards.

• Specific duties include:
• Financial/Operations:
• Accountable to maximize daily sales and profits by teaching, coaching and upholding service techniques to ensure a great guest experience.
• Effectively manage costs and labor control.
• Responsible for ensuring that all financial (invoices, reporting) and personnel/payroll related administrative duties are completed accurately, on time and in accordance with company policies and procedures.
• Prepares necessary data for the budget; projects annual food and labor costs and monitors actual financial results; takes corrective action where necessary to ensure that financial goals are met.
• Maintains inventories, orders and sufficient levels and rotation of product, small wares and the tools necessary to provide seamless service.
• Maintains monthly inventory reports with physical inventory counts.
• Responsible for managing opening, running and closing duties for department.
• Manage daily operations: staffing, scheduling, promotional efforts, repair and maintenance, cleanliness, organization, service timing, quality product, etc.
• Oversees, manages and takes full responsibility for all areas of Kitchen
• Oversees entire facility (excluding brewery production) when only manager on duty.
• Manage organization and cleanliness of departmental areas.
• Maintain safety and sanitation standards.
• Food Service:
• Responsible for all aspects of food service including quality and consistency of food and timely food preparation.
• Liaise with Pub Management to create seamless service and smooth operations by communicating menu updates in a timely manner (i.e. specials or outages) and by approaching customer requests and inquiries in a positive and timely manner.
• Research and develop new recipes. Plan balanced and varied menus for all food service areas considering customer base, popularity of various dishes, holidays, and cost.
• Assist front of house with food expediting.
• Consults with event coordinator regarding food service details.
• Responsible for execution of all caterings.
• Empowers staff to deliver highest standard of service.
• Staff Management:
• Manages staff training, employee relations and coordinate interdepartmental meetings and/or representation for meetings.
• Assures that staff morale is maintained at a high level
• Responsible for the development of staff
• Demonstrate a leadership style that creates a positive working environment
• Hold self and crew accountable for outlook, behavior, results
• Manage staff performance with consistent, direct and honest feedback, reviews and discipline
• Takes an active part in the recruitment and retention of staff
• Clearly communicate priorities concerning food readiness, the menu, and promotions through pre-shift and regularly scheduled meetings with staff.
Position requirements:
• Minimum of 5 years kitchen management experience with progressive responsibility in fast paced kitchen
• Catering experience
• Strong leadership skills
• The ability to plan, direct and execute initiatives related to departmental needs
• The ability to coach and mentor staff
• Excellent communications both written and verbal
